The Perfect Cupcakes!

Today I made some lovely classic cupcakes for the youth club I attend, they were celebrating 20 years and we were raising money for Ted’s big day out! I made 17 cakes with butter icing on the top and everyone loved them!!!

 

3 free range eggs

225 g ( 8 oz ) caster sugar

a few drops of vanilla extract ( optional )

100 g ( 4 oz ) unsalted butter

100 ml ( 3 1/2 fl oz ) milk

210 g of self raising flour

Method

Preheat the oven to 175 degrees c / 35o degrees f / gas mark 4

beat together the eggs , butter , vanilla and sugar until pale and fluffy

add the milk and blend with the egg mixture

Mix the flour in to the blend. Then put paper cases into a muffin tin , and put 2-3 spoonfuls in each case ( or until 3/4 full ).

Bake in the centre of the oven until mid-golden brown!
